Chocolate Lover’s Protein Parfait

I posted a picture on Instagram and Facebook of this AHmazing parfait that hubs and I had the other night, and it was met with enough fanfare that I figured it was high time to start posting recipes on my blog! So here it is folks, no deep introspection or lengthy monologues (I’ll save those for my general posts); just recipes of tasty things that I invent or modify from others or steal entirely (and I will *always* provide appropriate credit). So this chocoholic’s dream is made up of three components: crumbled brownies, peanut butter, and casein protein “pudding”. The brownies we already had on hand because I made a batch the day prior, so you’ll need to start there. I got the recipe from an awesome gal I follow on IG, Hailey with www.comecookwithus.co. I’ve posted her recipe as part of mine below, but credit where credit is due, it’s all hers! The only modification I made is that I only use 1/3 of the amount of coconut sugar she used and subbed granulated monkfruit sweetener for the rest because it has zero sugar (my fave brand is Lakanto and you can find it right here).

For the peanut butter, my favorite used to be Trader Joe’s Creamy Unsalted, buuuut Korea hasn’t hopped on the TJ’s bandwagon yet, so now I get three-packs of the Teddie Smooth on Amazon (find it here) and I *LOVE* it. Me, Teddie, and a large spoon have had many a midnight snack together. It’s just peanuts and salt, nothing more, nothing less, which is exactly what I look for in a peanut butter.

The real star in this dessert though is the casein. It’s what provides such an impressive dose of protein, as well as the chocolatey richness that glues everything together. I love my Shakeo during the day for smoothies and such, but casein is an awesome bedtime snack component because its slow digestion and amino acid release provide your body with overnight protein that it doesn’t typically get, allowing your muscles the chance to grow big and strong while you get some shut-eye. I’m working on finding more and more ways to incorporate it and will obvs share here when I come up with particularly tasty discoveries! We currently use Optimum Nutrition Casein in Chocolate Supreme.

One final note before the recipe—please don’t ask for the nutritional facts. I don’t know them, and I don’t care to figure them out. This isn’t that kind of blog. I’m very much in the mindset of “be aware of what I’m eating but don’t obsess over the details” these days, so just know that these have lots of protein, some healthy fats, and as much or as little sugar as you’d like, depending on what types of sweetener and peanut butter you use. However you make it though, ENJOY!


Chocolate Lover’s Protein Parfait

Step 1: Make Yo Brownies

Ingredients:
1/3 cup cacoa powder
1/4 cup granulated monkfruit sweetener*
1/4 cup coconut sugar*
2 eggs
1/2 cup greek yogurt**
1/4 cup almond milk
1/2 tsp salt
1 tsp baking powder
1/2 cup mini chocolate chips
1 tsp vanilla extract
2/3 cup almond flour

*option to sub in whatever granulated sweetener you prefer, I wrote out the combo I used but you could also just do 1/2 cup of one or the other, or regular sugar, or whatever else tickles your fancy

**we don’t have whole-fat Greek yogurt available here, but if we did I totally would’ve used it. I think it would’ve made em just a little more rich, which is always a good thing!

Directions:
1. Preheat oven to 350° F
2. Add all ingredients to a bowl and mix to combine.
3. Transfer batter to a baking dish and bake for 15-20 minutes or until a toothpick comes out with moist crumbs attached.
4. Cool and then enjoy!

Step 2: Make Yo Casein Pudding

Ingredients:
1. 2 scoops chocolate casein protein powder
2. 3/4 ice water (more as needed)
3. 1/2-1 Tbsp cocoa powder (for extra richness)

Directions:
Combine in bowl!
(Remember that this is supposed to be the texture of pudding or thicker, so that’s what the water measurements create. If you don’t use ice water, start with less because the extra chill helps firm things up more, and regardless of temperature, if you feel it’s too thick then just add a little more water at a time until it’s a consistency you’re happy with.)

Step 3: Make Yo PARFAIT!

Ingredients:
1. Crumbled brownies
2. Casein pudding
3. 1/4-1/3 cup warmed peanut butter (makes spreading easier)

Directions:
1. Sprinkle some brownies in the bottom of a glass/mug/bowl
2. Layer some warmed peanut butter on top (not the easiest feat but just do your best)
3. Add a big ol’ glop of casein pudding
4. Repeat steps 1-3 and garnish with a little extra brownie
5. EEEEEAAAT
